The Trick to No-Fail Thick and Fluffy Japanese Pancakes (NO EGG)

The trick to no-fail thick and fluffy pancakes is Morinaga's Hot Cake Mix!!! It is a very popular product known for many years. Even if you mix in a circular motion, you can make a thick pancake. Perfect for kids to cook.

Btw, not sponsored. LOL Don’t take me wrong. I know you don’t want to waste time to fail, so I am sharing this with you instead of the from scratch video. VERY EASY as you can see.

It is our culture using the Hot Cake mix. You can find it at Japanese grocery stores or online for sure!

Hot Cake Mix is versatile. You can make cakes, cookies, muffins, or any kind of sweets :D I will show you how to make them someday!

The pancake molds I used ふんわりホットケーキ型:

The Trick to No-Fail Thick and Fluffy Japanese Pancakes

Difficulty: Easy
Time: 20min
Number of servings: 2 9cm/3.5inch Muffin Rings (Cercle)

1 (150g) Morinaga Hot Cake Mix (flour)
160ml milk
1/2 tsp. vinegar *vinegar makes the cake even fluffier
cooking oil
Morinaga cake syrup (maple syrup)

1. Mix cake mix, milk, and vinegar. Do not over mix, some lumps are okay.
2. Grease the cake rings and a frying pan with cooking oil. Pour batter to about half full. Cover and cook on low for 10 minutes. Flip them over, cover, and cook on low for 5 minutes.
3. Check for doneness with a skewer. Remove from the cake ring and serve on a plate. Place a piece of butter on top and pour some cake syrup.

You can wrap in a plastic wrap and freeze to eat later.
Microwave for a minute and you can enjoy fresh and fluffy pancake :)

NO BAKE Rainbow Soymilk Cheesecake (appetizing pastel color) - Video Recipe

Just mix 6 ingredients + food colorings ;)

NO BAKE Rainbow Soymilk Cheesecake

Difficulty: Easy
Time: 20min + cooling time
Number of servings: 18cm (7inch) cake pan with a removable bottom or muffin rings are OK

200g (1 cup) cream cheese *room temperature
5 tbsp. granulated sugar
200ml soy milk *room temperature
60g (2.1oz.) biscuits
30g (2.5 tbsp.) butter *room temperature
6g (1 tbsp.) gelatin powder
2 tbsp. hot water
Wilton Icing Gel Colors

1. Smash the biscuits in a Ziploc bag, add butter, then mix well. Press firmly into a cake pan or muffin rings.
2. Put cream cheese and sugar in a bowl, then mix well. Add soy milk and mix well. You can add lemon juice and/or vanilla extract if you want.
3. Mix gelatin and hot water, then add and mix well.
4. Divide it into 5 small bowls, then mix in your favorite icing colors.
5. Pour it into the pan from the center then cool in the fridge until firm for 2 hours. (You may want to cool the mixture slightly not to blur the colors.)

May 5th is Children's Day, called "Kodomo no hi" in Japanese. It is also Boy's Day, called "Tango no Sekku" in Japanese. On this day, we display Samurai swords, armor, helmet, etc… along with two important symbols of the Day: carps (Koinobori) and irises (Shobu).

Stir-Fried Dried Squid and Vegetables (NO Knife! Kitchen Shears) - Video Recipe

We received some dried squids when we visited the nearby shrine for our son's Omiyamairi (the first shrine visit) and my darling's Yakubarai (ceremony to drive away evil spirits). I decided to make a dish out of them.

It turned out to a very tasty and delicious stir-fried dish, goes great with white rice. Oyster-sauce flavor, with a hint of chive is obviously addictive. Very filling with lots of bean sprouts ;)

You don't need a knife but use kitchen scissors / kitchen shears!

Of course, you can use regular squids.

FYI: Hatsumiya-Mairi (初宮参り) or Omiyamairi (お宮参り) is one of the traditional celebration events for Japanese babies. Whenever a newborn is over a month old, we bring the baby to a nearby shrine for a greeting (giving the invocation).

Stir-Fried Dried Squid and Vegetables

Difficulty: Easy
Time: 20min + soaking time
Number of servings: 4

2 dried squids
400g (14oz.) bean sprouts
1 bundle Chinese chives
1 tsp. Toban Jan (hot bean sauce / Chinese red chili paste)
1 tbsp. sesame oil
* 1 tbsp. Sake
* 1 tbsp. oyster sauce
* 1 tbsp. soy sauce
* 1 tsp. sesame oil

1. Soak the dried squids in water overnight to make them soft. Cut into thin strips using kitchen shears. *remove the hard gristle and dirty tips
2. Mix A very well.
3. Heat sesame oil in a frying pan, add Toban Jan, then cook until fragrant. Add the squids, then stir-fry until heated.
4. Add the bean sprouts and cook until coated with oil. Then add the Chinese chives (cutting them into 2 inches long with kitchen shears), season with A to finish.

Steve Jobs

Did you watch Steve Jobs movie?!

My darling and I watched it yesterday.

but... the story line was so so...

Of course, there were some inspiring scenes that I liked, but so so overall.

BTW, I was a MAC user when I was a college student. (I still have my ibook G3 M6411 and it is still working!) But since then I switched to windows and I was away from MAC until 2011. Now I use MacBook Pro as a main machine and I really love it :)

Batman: The Dark Knight Rises

Today on July 28th 2012, "The Dark Knight Rises" was released in Japan. I liked the story and the ending. This is a must watch movie :D

Eight years on, a new terrorist leader, Bane, overwhelms Gotham's finest, and the Dark Knight resurfaces to protect a city that has branded him an enemy.

My darling was excited to see it while I was concerned about the Colorado shooting... I totally understood that people at the theater thought the criminal was part of the show... I'm glad we were safe. whew...

Anyways, last time I saw Anne Hathaway was in The Princess Diaries! I liked the way she has a totally different personality. And yet, she was too attractive and beautiful :D

The Amazing Spider-Man

Today my darling and I've been to the movies after so long because we were busy. My darling loves to watch movies but I really don't until I actually step into the theater and watch. hehe

So, today we watched "The Amazing Spider-Man" which was released in Japan on June 30th. The movie was very entertaining. You must watch it :) I cannot wait to watch the next one (which might be coming soon!?).

Peter Parker finds a clue that might help him understand why his parents disappeared when he was young. His path puts him on a collision course with Dr. Curt Connors, his father's former partner.

I just searched and realized the former Spider-Man 3 was released in 2007, almost 5 years ago! I didn't even write about it on my blog but I feel like I watched it recently. Time flies!!!

The next fun movie we plan to watch is The Batman: The Dark Knight Rises which will be released on July 28th. Can't wait to watch it. BUT not in 3D because it caused eyestrain today... haha

The Artist

Today my darling and I've been to the movies after a long while. We watched The Artist which was released on 4/7 in Japan.

Since my darling chose to watch it, I didn't read anything about the movie, so I wondered if I could enjoy it because it was black and white. But after the first few minutes I found the story was attractive and I liked it! I couldn't bear to see George Valentin's pride as a man. haha But I always think it is better to acknowledge our pride and become more modest to take on a new change, so that was well described.

Silent movie star George Valentin bemoans the coming era of talking pictures and fades into oblivion and self-destruction, but finds sparks with Peppy Miller, a young dancer lighting up talkies like no one else.

Cowboys & Aliens

Did you see Cowboys and Aliens already?!

It was released in Japan on 10/22, so my darling and I went to see it on Saturday. I've written for many times but I really love Harrison Ford since the Indiana Jones‎ series so I was kind of shocked when I knew he is not the leading actor in this movie. However, unexpectedly, the movie was awesome!!! Daniel Craig was really cool! I love his cowboy!!! He must have seen and learned a lot from Harrison Ford's Indiana Jones!!! He was exactly what I want! LoL

I first thought the story line is pretty weird fighting with aliens but now I would say it is unimaginably cool. Of course, filled with love, laughter and tears!

I watched 4 movies on the plane to NY. Also 2 movies on the way back.

The best movie was The Adjustment Bureau. A romantic thriller. I wouldn't write more than this. You must watch it! It conveys a great message to you. I love it :)

Valentine's Day (2010): Not that interesting movie than I thought...
Hall Pass (2011)

I think The Adjustment Bureau is the only one that is worth to pay to watch at the theater...

Gulliver's Travels

Gulliver's Travels just came out on Friday (2011/4/15) in Japan.

Travel writer Lemuel Gulliver (Jack Black) takes an assignment in Bermuda, but ends up on the island of Lilliput, where he towers over its tiny citizens.

So, on Saturday, my darling and I went to the movies after so long! The story was comical but somewhat romantic. I kind of agree that people can feel motivated by other people's attention. It was funny that Gulliver actually changed Lilliput while he couldn't change anything as a mail clerk.

The Social Network

On Saturday, my darling asked me to watch the movie called "The Social Network" which just came out on Saturday (1/15) in Japan. I was not that interested in the movie at first, but the movie was quite interesting!!!

The film is about Mark Zuckerberg who created the facebook.

What I liked about the movie is that Mark simply wanted to create something COOL and created the facebook. I really want to show this movie to my boss since we run two websites at work and are not cool at all because he always seeks gain. I stop saying him about that few years ago and shifted to work for a living, so I'm not gonna say anything but I simply hope he sees this movie and understands what we should have done for our sites.

Did you watch "INCEPTION" already?
My darling and I watched it on Saturday.
It's a must-watch movie :D

Cobb (Leonardo DiCaprio) is a skilled thief, stealing valuable secrets from deep within the subconscious during the dream state, when the mind is at its most vulnerable. Cobb's rare ability has made him a coveted player in this treacherous new world of corporate espionage, but it has also made him an international fugitive. Being offered a chance at redemption, one last job could give him his life back but only if he can accomplish the impossible-inception. Instead of the perfect heist, Cobb and his team of specialists have to pull off the reverse: their task is not to steal an idea from the dream but to plant one.

To tell the truth, I wanted to see more lines for Ken Watanabe since his role in the last half of the film was a injured person. Anyway, the movie was very interesting. I never thought about dreaming in my dream in several levels. Likely but unlikely scenario is very depthful, made me bask in the afterglow of the story.

On Saturday, my darling and I went to the movies.

We saw UP IN THE AIR - With a job that has him traveling around the country firing people, Ryan Bingham leads an empty life out of a suitcase, until his company does the unexpected: ground him...

The movie pictures ups and downs of our lives. From the movie, I thought what makes yourself happy is to keep the faith. The guy "Ryan" questioned his life of being lonely, after making business trips with a new recruit "Natalie". Before, he believed meeting people is a momentary amusement, but Natalie changed his mind and let him catch the lady "Alex" who he dated for few times, actually was married... If Ryan didn't take Natalie's word, he might have gone his way not chasing the lady, being happy, but now he feels lonely. What a life...

Anyway, casts were great! I loved their performances! They made me think what is important in my life and what makes me happy.

It was 3-day-holiday this weekend, but now it's over. Time flies!!! I bought fuchsia pink Arnold Palmer suitcase :D Can't wait to travel! My darling was pretty tired while I speak too much every single moment... Do you ladies understand me?! I didn't mean to speak a lot... I took his picture because he looked really tired...

I hope he is having a quiet time at work today!

Yesterday evening, I was somehow dizzy and I thought I caught a cold but after taking a cold medicine and dancing hula, I got well and stayed up late till 2 am. Then this morning, I woke up early in high spirits! I thought it's going to be a good day but things happened right after I finished my eye makeup...

I tried to put the glue on my false lashes, but the glue was clogged and it didn't come out. So I squeezed the tube from the bottom... then guess what happened! All the glue popped out from the tube and splashed me in my left eye!

What the heck!!!

My foundation... my eye shadow... my double lines...

I fixed my eye but my mood is gone... you know...

Then another splash in the kitchen. While I was pouring soymilk, it splashed out from the blender... Then another one again! An automatic soap dispenser splashed while washing my hands at work. Hope this is the last one...

BTW, "splash" reminds me of my favorite mermaid movie. Have you ever seen it before?! It's a romantic story. Hope I could have a chance to watch it again.

INVICTUS means "unconquered" in Latin.

My darling and I watched the movie on Saturday. It's a movie directed by Clint Eastwood. The movie is based on an actual story of Nelson Mandela (President of South Africa in 1995). His one strong hope for Springboks (a rugby team) changed the world for real!

I didn't know the rules of rugby, but the game was really cool ;)
